Drunken Noodles

Enjoy this easy recipe for comforting drunken noodles. A Thai favorite!

Ingredients
  • 1 lb. of favorite noodles

  • 1 lb. chicken, pork, or shrimp; thinly sliced except for shrimp

  • 2 eggs, slightly beaten

  • 1 onion, thinly sliced

  • 1 red bell pepper, thinly sliced

  • 2 jalapeno peppers, thinly sliced

  • 5 cloves garlic, minced

  • 3 sprigs fresh basil, torn leaves

  • Neutral Oil to coat pan; canola or vegetable

Sauce

  • 6 tbsp oyster sauce

  • 3 tbsp rice vinegar

  • 3 tbsp fresh lime juice

  • 1 tbsp sugar

  • ½ teaspoon white pepper

Plating

  • Soy sauce to taste, optional

  • Garlic Chili sauce to taste, optional

  • Sesame oil to taste, optional

Prepare Sauce

Whisk oyster sauce, vinegar, lime juice, sugar, and white pepper. Set aside.

Prepare Noodles

Prepare noodles per instructions. If you are making homemade fresh noodles, drop in the boiling water approximately 2 minutes before the main mixture is complete.

Main Mixture

Pour enough oil into a large deep skillet or wok to coat the pan and turn on to medium-high heat. In hot pan, stir onions and garlic until fragrant and slightly softened. Add meat and peppers and constantly stir until meat is cooked thorough; approximately 6-7 minutes. Move the mixture to one side of the pan.

Pour beaten eggs into pan and cook until become set (do not mix). Cut eggs into pieces and stir into mixture to thoroughly combine.

Add sauce and basil to thoroughly combine. Add noodles to thoroughly combine. Plate and add optional ingredients to taste.
