Ingredients
  • 4 ears corn, shaved to cob (milk is good)

  • 3 slices of bacon, crumbled, keep drippings in skillet

  • 2 garlic cloves, minced

  • ½ cup, red onion, small diced

  • 2 tbsp, butter

  • Salt and pepper – to taste

  • 2 green onions, thinly sliced to garnish

Instructions

In a large cast iron skillet, fry the bacon, remove the bacon on a paper towel, and leave the drippings in the skillet.

In the same cast iron skillet on medium heat add butter to the drippings. Add corn, garlic, and onion and combine to coat. Cook down the corn to a fry stirring occasionally.

A good trick is to listen to your corn – it will tell you when it is time to turn, and the corn should easily release from the skillet. Depending on your personal taste, fry to the desired caramelization and texture.

Add bacon crumbles, salt and pepper to taste. Enjoy!
