Pea Salad

Pea salads are all basically the same ingredients as cooks adjust the measurements to their family’s taste. This is a delicious version of a green pea salad to make the day before you serve.

Ingredients

Sauce

  • ½ cup, mayonnaise (Duke’s is a great option)

  • ¼ cup, sour cream

  • 1 tbsp, sugar or honey

  • 1 tbsp, apple cider vinegar

  • ½ tsp, kosher salt

  • ½ tsp, cracked black pepper

Salad

  • 6 slices of bacon, cooked crisp, chopped

  • 1 bag, frozen peas, thawed

  • 1 cup, cheddar cheese, small bite-size cut

  • ½ cup, chopped green onion; or ¼ cup chopped red onion

Instructions

Fry the bacon and set aside; drain on a paper towel.

Thoroughly mix the sauce of mayonnaise, sour cream, sugar, vinegar, salt and pepper in the salad bowl container (that has a lid). Add the remaining ingredients and stir to combine.

Refrigerate for 4 hours or overnight to set. Enjoy!

NOTES

  • This pea salad recipe is a great accompaniment to a bed of butter lettuce or romaine lettuce leaf.

  • Sub with country ham but control the amount due to salt content.

  • Always good when grilling out and sharing at potlucks.
