Blackberry Cobbler
Cobbler is a southern favorite. This recipe is very simple to make and a terrific dessert for any day or occasion. The key to a good cobbler is not mixing as you place ingredients into the hot baking dish. Enjoy!
Ingredients
16-oz blackberries (thawed if frozen)
1 tablespoon sugar for maceration of fruit
6 tablespoons butter
1 cup sugar
¾ cup all-purpose flour
1 teaspoon baking powder
Pinch of salt
1 cup whole milk
1 teaspoon vanilla extract
Add a tablespoon of sugar to the fruit and macerate for a minimum of half an hour.
Preheat oven to 375° degrees. Whisk dry ingredients – flour, sugar, baking powder, and salt to combine. Add milk and vanilla extract to your dry ingredients bowl and whisk to combine only. Set aside.
In a small-to-medium casserole dish add your butter and place in the hot oven to melt completely. Add your batter to the hot dish – do not mix. Spoon your fruit evenly on top of the batter, including all juice – do not mix. Place in oven for 45 minutes. Begin checking your cobbler for about 35 minutes, as ovens may vary. The cobbler should be golden brown. Remove and serve warm to room temperature.
NOTES
Cherries or peaches go very well as a fruit substitute. A large can of peaches instead of fresh or frozen can also work with this recipe (use light syrup or in its own juice and include all liquid).
If using peaches add ½ teaspoon of cinnamon.
Simple but rich dessert. A little goes a long way, especially with a scoop of ice cream.
