This is an easy-to-make recipe for flavorful banana nut bread. This bread is foiled for a few days before serving to enhance the moisture of the bananas. It is great to serve by itself as a snack, or with a scoop of ice cream, or spread cream cheese on a slice. Enjoy!
Ingredients
2 cups of all self-rising flour (White Lily is a favorite)
3-4 ripe bananas
1 cup chopped toasted pecans or walnuts (lightly dusted with flour)
1/3 cup sour cream
½ cup buttermilk
2 eggs
1 cup sugar
1 tsp baking soda
½ tsp cinnamon
1 tsp vanilla extract
1 tsp salt
Instructions
Preheat oven to 400° degrees.
Dry Bowl – combine all dry ingredients and set aside.
Wet Bowl – Whisk together or use mixer to thoroughly combine all wet ingredients.
Add dry ingredients to wet bowl in thirds and stir just enough to combine. Pour batter into a greased (buttered) large loaf pan.
Bake for 45 minutes or until it’s done. Remove from oven and let cool enough to remain warm to touch. Wrap banana bread in plastic wrap and place the wrapped loaf in aluminum foil. Set aside for 1-2 days before serving.
NOTES
Begin checking bread at 35 minutes as ovens vary.
Great with cream cheese or cream cheese spread.
